Nose :
The nose is fine and elegant, dominated by aromas of ripe black fruits (blackcurrant, blackberry) accompanied by subtle notes of violet and licorice. Lightly spicy and cedar touches enrich the bouquet, bringing a beautiful complexity and a sensation of freshness.
Mouth :
On the palate, this Haut-Médoc is supple and fruity, with beautiful body and velvety tannins. The attack is ample, supported by a beautiful acidity that gives the wine dynamism. The mid-palate is rich, with aromas of black fruits and noble wood, and the finish, long and elegant, is marked by nuances of graphite and cocoa, testifying to careful aging.
Vinification:
The grapes were hand-harvested, carefully sorted, and vinified separately according to the grape varieties. After fermentation, the wine was aged in oak barrels (a proportion of which were new) for approximately 12 months. This maturation phase allowed the wine to acquire a beautiful complexity while respecting the fruitiness and freshness characteristic of the Haut-Médoc terroir.
Food and wine pairing:
This wine pairs perfectly with bold cuisine. Ideal with grilled meats, prime rib, or even a tournedos Rossini. It also pairs well with mature cheeses like Comté or Saint-Nectaire. Its elegant structure makes it an excellent companion for festive meals or convivial gatherings.
Storage potential:
Although already enjoyable to drink in its youth, this 2020 Château Sénéjac has interesting aging potential. It will develop over the next 8 to 12 years, gaining complexity and depth over time.
