A natural wine is a wine made with minimal human intervention, both in the vineyard and in the cellar. It is made from grapes grown using organic or biodynamic farming methods , harvested manually, and vinified without oenological inputs , that is to say without added products such as industrial yeasts, enzymes, or acidity regulators.
Fermentation takes place with indigenous yeasts (those naturally present on the grapes and in the cellar), and the wine is generally neither filtered nor fined (i.e. not clarified by agents).
Sulfur (sulfites), used to stabilize wines, is either absent or used in extremely small quantities , only if necessary for bottling.
Organic or biodynamic grapes.
Manual harvest.
Fermentation with indigenous yeasts.
No or very little chemical intervention (no or very little sulfites).
Unfiltered wine, unfined in most cases.
Unlike organic wine, there is no official label (yet) for natural wine.
Natural wine can have a very strong personality : more lively, sometimes a little cloudy, with atypical aromas, which pleases some enthusiasts but can be surprising.
