What wine to drink with Savoyard Fondue?

The season has started!

Savoyard fondue is a delicious, comforting, and cheesy dish, making it an interesting wine pairing challenge. When choosing a wine to accompany your Savoyard fondue, it’s important to consider its creamy texture, cheesy flavor, and hearty character.

Here are some suggestions for wines that will pair well with a Savoyard fondue:

White wines

  • Savoie White Wine: There’s nothing better than choosing a local wine to accompany a traditional dish. Savoie white wines, such as Jacquère or Chignin-Bergeron, are popular choices. They’re fresh, lively, and have a balanced acidity that can contrast nicely with the richness of the fondue.
  • Chardonnay: A dry, unoaked Chardonnay will also work. It will bring notes of apple and lemon that pair well with the cheese.
  • Sauvignon Blanc: A dry Sauvignon Blanc, such as those from the Loire or New Zealand, can offer citrus and grassy aromas that will balance the fondue.
  • Riesling: A dry Riesling from Alsace or Germany can be a nice option, especially if it is young and fresh. Its aromas of stone fruit and citrus can contrast nicely with the fondue.

The main goal is to choose a bottle of wine that complements the Savoyard fondue without overwhelming it. A good balance of acidity and richness is essential. Be sure to serve the wine at an appropriate temperature, slightly chilled for whites and sparkling wines, and slightly chilled for light reds.

The recipe:

Ingredients :

400 g of Abondance, Beaufort, Tomme de Savoie or Gruyère cheese (or a mixture of these cheeses)
1 clove of garlic
1 glass of dry white wine (about 12cl)
1 tablespoon cornstarch
1 baguette, diced
Ground black pepper

Instructions :

  1. Rub the inside of a fondue pot with the peeled garlic clove.
  2. Finely grate the cheese. Mix it with the cornstarch to help thicken the fondue.
  3. Pour the white wine into the fondue pot and heat it gently over medium heat.
  4. When the wine is warm (but not boiling), add the grated cheese little by little, stirring constantly with a wooden spoon to melt it. Use a figure 8 motion to obtain a smooth consistency.
  5. Once the cheese is melted and the mixture is smooth, season with ground black pepper.
  6. Place the fondue pot on a stove and start tasting.
